The month of Sawan is in progress. Devotees keep fast on Mondays to please Lord Shankar. On fasting Mondays, it is permissible to eat fruity things. This includes sabudana. Most people like to make and eat sabudana khichdi. Because it is prepared quickly. And the stomach stays full for a long time. But khichdi is not be prepared without adding salt. Therefore, if you want, you can prepare sago kheer and use it during fasting. It can be easily prepared in a very few minutes. So we want to know how to prepare sabudana kheer. Ingredients for the preparation of Sabudana Kheer (Sago Pudding): ​You can put one cup of sabudana , milk one liter, sugar four to five spoons or according to taste, cardamom powder a small spoon, 4 to 5 grains of saffron, four spoons of condensed milk, cashews, almonds and pistachios as your wish.

How to make sabudana kheer:

  • To make sabudana kheer, first bring the milk to boil in a pot. When the milk boils, reduce the flame of the gas completely. Then add cardamom powder to the milk. Add saffron and chopped dry fruits of your choice.
  • If you like, you can also use dried fruits like dates, cashews and almonds. This can be used to increase the sweetness of the kheer and reduce the use of sugar. Be careful not to add raisins to the boiling milk, because if the raisins turn sour, the milk may burst.
  •  If you wish, you can add raisins after the gas is turned off. These dried fruits act as a natural sweetener. In this way, the milk can be easily consumed. 
  • When all the dried fruits have been added to the milk, let it boil for at least five to ten minutes. Wash the sago well with water and then add it to the milk. And in such a way that it becomes quite clear. Now let the sabudana boil on low heat. It takes 20 to 25 minutes to boil.
  •  When the sabudana is well cooked and puffed up, add condensed milk to the kheer. Then add sugar to your taste. When the sugar is melted, turn off the gas quickly.
  •  Serve the kheer while it is still hot and garnish it with dry fruits. You can also eat this kheer without dried fruits.
